Job Description

  • POSITION TITLE: Hygiene Officer

I. MAJOR RESPONSIBILITIES AND DUTIES

  • Conducts regular spot-checks and surprise audits in all food handling, preparation and storage areas through thorough inspection to ensure compliance with Okada Manila Food Safety Management System, National and Municipal Sanitation Code and International Food Safety Standards like GMP, HACCP, ISO22000, etc.
  • Drafts incident reports to non-compliances when necessary based on the approved Hygiene Violation Matrix.
  • Conducts hygiene vendor audits and reviews all necessary applicable requirements and coordinates with all concerned business units on the schedules and verify compliance of the suppliers to the minimum requirements of Food Safety Standards set by Okada Manila to avoid any food safety-related incidents; generates vendor audit report and sends it to all concerned departments to ensure vendor compliance to the Food Safety Standards set by Okada Manila and avoid any Food Safety incidents attributed to vendors.
  • Investigates food sanitation and safety guest and employee complaints by conducting thorough investigation of the incident, generates reports and recommends necessary and corrective action to ensure the welfare of all concerned and the company.
  • Reviews the service reports submitted daily by the pest control service provider to check if areas to be inspected and treated based on schedule is met; reports any pest sighting to service provider to effect immediate necessary actions to eliminate or avoid pest sighting or infestation in all F&B areas to establish the appropriate controls needed to avoid pest infestation in all food handling, storage and preparation areas.
  • Prepares all materials needed and assists during the trainings and orientation on Food Safety and Hygiene, and other food safety-related training for food handlers. Ensure that all exam papers are marked and training certificates are released accordingly to ensure that all food handlers are trained and aware of the OMFSMS Standards and avoid any food safety incident caused by negligence to their duties and responsibilities. Encodes training evaluation sheets.
  • Performs internal laboratory testing of food, swabs, water and ice, based on schedule or as needed (e.g. emergency sampling and testing) as part of the verification process on food safety.
  • Issuance of new and replacement of hygiene supplies and equipment based on the opening outlets/ kitchens and needs of the operations.
  • Conducts regular inventory of hygiene equipment and laboratory testing materials are carried out as scheduled.
  • Checking of required Hygiene Records and ensures records are complete and submitted on a timely manner by all required sections and are safe kept within the established record retention in order to have records available in cases of need. Reviews hygiene records, identifies and summarizes common non-conformances which will be submitted to concerned section heads for their necessary action. Ensures proper monitoring of all document control records pertaining to Hygiene.
  • Verifies status and completion of all Facility Management work order forms.
  • Conducts internal and external monthly sampling for water and ice, food, swab, air and delivery inspection and prepares the visitor access pass and other documents related to the sampling activity in order to ensure that sampling has been done in an orderly and timely manner.
  • Performs administrative and clerical support through mailing, scanning, faxing, copying, typing, filing and minutes taking in order to ensure a well-organized and coordinated Hygiene Section which handles important and critical aspect of the Food and Beverage Division.
  • Maintains confidentiality of all documents, materials and all information in relation to assigned duties.
  • Performs assigned special assignment and project related to Okada Manila Food Safety Management System (OMFSMS).

Qualifications/Requirements

II. JOB SPECIFICATIONS

Educational Requirement:
  • Bachelor’s Degree preferably with background in Microbiology, Biology, Food Technology, Nutrition or any Food Science-related course
Experience Requirements:
  • At least 6 months experience as a Hygienist in an Integrated Resort/ 5-star Hotel or as Quality Assurance Specialist in a food manufacturing firm
  • Have basic knowledge and experience in implementing a Food Safety Management Systems such as HACCP, GMP, SOPs, ISO, etc.
