Job Summary:
Responsible for maintaining cleanliness and sanitation standards for china,glassware, tableware, cooking utensils, etc. Using machine and manual cleaning methods.
Primary Responsibility:
1. Performs a number of kitchen activities including pot washing, dish washing, general cleaning duties and storing food and non-food supplies.
2. Sorts and rinses dirty dishes, glass, tableware and other cooking utensils and places them in racks to send through the dish machine.
3. Sorts and stacks clean dishes. Carries clean dishes to cook’s line and other proper storage areas.
4. Rewashes soiled dishes before delivering.
5. Washes dishes, glassware, flatware, pots, and/or pans using dishwashers or by hand.
6. Places clean dishes,utensils, and cooking equipment in storage areas.
7. Sweeps/mops floors.
8. Sweeps up trash around the exterior of the restaurant and garbage dumpster.
9. Wipes up any spills to ensure kitchen floors remain dry.
10. Sets up or breaks down the dishwashing area.
11. Transfers supplies and equipment between storage and work areas.
12. Cleans and Sanitizes production equipment, work surfaces and kitchen according to cleaning schedules and procedures.
13. Notifies Head Chef anytime dish machine wash or rinse cycle falls below safety standard temperatures.
14. Empties trash containers as required. Sorts and removes trash, cleans garbage bins and places them in designated areas.
