Job Summary:
We are hiring a skilled and dependable Prep and Line Cooks to assist in our Japanese kitchen specializing in ramen, sushi, sashimi, and unagi dishes. The ideal candidate must have a passion for Japanese cuisine, attention to detail, and the ability to support chefs in preparing high-quality traditional dishes. This role is essential to maintaining a smooth and efficient kitchen workflow.
Key Responsibilities:
General Prep Duties:
Wash, peel, cut, and prepare vegetables, seafood, meats, and other ingredients according to recipe and portion standards.
Maintain cleanliness and sanitation of workstation and kitchen tools at all times.
Store and label all prepared items following FIFO (First In, First Out) and hygiene guidelines.
Assist with receiving, checking, and storing fresh ingredients, especially seafood and imported Japanese items.
Ramen Kitchen:
Prepare ramen toppings such as chashu, ajitama (marinated egg), menma, and nori.
Assist in portioning noodles and preparing base ingredients like tare, oils, and broths.
Support chefs in assembling ramen bowls during peak hours.
Sushi & Sashimi Station:
Prepare sushi rice (shari), vinegar mixture, and handle raw fish under supervision.
Portion and organize sashimi-grade seafood based on freshness and cut requirements.
Assist with prepping garnishes and condiments like wasabi, pickled ginger, and sauces.
Unagi Kitchen:
Assist in the preparation of unagi (eel) including cleaning, marinating, and grilling support.
Portion and plate unagi for donburi, sushi, or bento dishes following chef's instruction.
